I don’t know about your kids/family, but when I announce we’re having nachos for lunch I receive cheers filled with excitement. Lunch today could not have been more balanced. Refried beans prepared in an iron skillet provided protein, calcium, magnesium, potasium, folate, dietary fiber and iron. Fresh avocado provided omega 3s, dietary fiber, calcium, magnesium, potasium, vitamins A, B6, and C, and Folate. Fresh and cooked tomatoes provided lycopene, calcium, iron, magnesium, potasium, zinc, Vitamins A, B6 and C, and folate. And… it was SO good.
A spinkle of cheese and grapes on the side and we’ve reached all of our food groups.
Eating a healthy meal doesn’t have to be bland or boring. Keep lunch fun. It will keep them coming to the table, promise!
