How to Cook Collard Greens (Southern-Style and Otherwise)

It seems like 90% of the recipes using collard greens are traditionally southern and involve ham hocks, turkey gizzards, or some other innards.  Not appetizing to the vegetarian and intimidating for people who are not used to cooking this delicious green.

I’ve posted several traditional collard recipes, vegetarian, and even vegan recipes to help you enjoy your collards.  The above photo is of a recipe posted on FatFree Vegan KitchenCollards stuffed with Red Beans and Rice.  As the blog name implies, its vegan!
