Cinco de Mayo Celebration

It’s all the buzz this weekend, the excuse to celebrate with friends for Cinco de Mayo. Do you need a last minute recipe? Here’s a quick guide to spice up that party you’re headed to (or to surprise your family tonight):

Black Bean Corn Salsa

You’ll Need:
2 cans of Black Beans, rinsed
1.5 cups of Fresh Corn, steamed and chilled OR 2 cups Frozen Corn
2 medium size Tomatoes , diced OR 5 Roma Tomatoes, diced
0.5 small to medium size Red Onion, diced
0.5 Yellow Bell Pepper, diced
0.5 Orange Bell Pepper, diced
3 TBSP Freshly Chopped Cilantro Leaves
3 TBSP Oil
2 Limes, freshly squeezed
dash of salt
dash of cumin

Directions:
Mix all ingredients in a large bowl and chill until ready to serve.

Sweet Corn Cake

You’ll Need:
1 Stick of Butter, softened
0.3 cup Masa Harina (Corn Flour)
0.25 cup Water
0.5 cup Corn Meal
0.3 cup Honey
0.25 TSP Salt
0.5 TSP Baking Soda
2 TBSP Milk or Cream
1 cup Fresh Corn, steamed OR 1.5 cup Frozen Corn
dash of Chili Flakes (optional)

Instructions:
1. Combine butter, water, honey and masa harina in large mixing bowl and mix on medium-high speed. You should get a creamy texture when done.
2. Add corn meal,  salt and baking soda in a small mixing bowl. Mix thoroughly using whisk.
3. Pour dry mixture on top of the creamed mixture.
4. Mix the two mixtures together until smooth.
5. Stir in corn kernels.
6. Pour cake mixture into ungreased 8×8 inch pan. Cover with foil.
7. Place the 8×8 pan inside of a 9×13 inch pan. Pour hot water into the 9×13 inch pan until half way up the sides of the pans.
8. Bake at 350 for 50-60 minutes.
9. Remove from oven and let it sit for 15 minutes uncovered.
10. Serve

Mock-that-Margarita Lemon-Lime-ade Punch

You’ll Need:
12 Lemons, juiced
6 Limes, juiced
2 cups Sugar
2 cups Water
2 Liter of Seltzer Water
16 oz. Dark Cherry Juice or Stawberry Sauce

Directions:
1. Dissolve sugar into water by combining these two ingredients into a small sauce pan. Bring a boil for 3-5 minutes. Allow to cool.
2. Combine sugar water, lemon juice, lime juice, and cherry juice or strawberry Sauce in a large container. Mix well.
3. Chill the juice mix or add to ice.
4. When ready to serve, add Seltzer Water.
(This makes ~2 Gallons.)

NOTE: Add additional water/ice to dilute as needed.

Create Your Own Natural Food Coloring

I can still remember those early days of college when my Advisor was trying to catch the attention of wanna-be graduate students, using the classic trick of extracting natural food pigments and then adjusting their pH to make them change colors. Little did they know, this wasn’t rocket science, nor was it graduate level material. BUT, it caught their attention and opened the door for him to discuss the health benefits of foods containing these natural pigments.

As we shift into spring and begin to think about egg coloring or those numerous birthday cake/cupcake making parties in our future, why not take a moment to look into the use of natural food coloring.

With a quick search online, one can find numerous posts that describe how to create your own colors. My two favorite posts are found at Mommy Nuggets and Itsy Bitsy Foodies. Just think, this could be YOUR personal science experiment with the kids. Simply follow either of these two blog posts to create your own dyes. Then, place 1 TBSP of color in a small bowl or glass with 2-3 TBSP water. Have your children add a few drops of vinegar/lemon juice or milk/baking powder. They can record their predictions and results on a piece of paper. For sure, they will think you’re the coolest mom-scientist ever!

Daniel Fast Salsa Recipe

You’ll Need:

3-4 large Tomatoes, unpeelsed, unseeded, quartered
1 (10 oz) can Diced Tomatoes and Green Chilies (undrained)
0.5 cup chopped Green Bell Pepper
0.5 cup chopped Red Bell Pepper
0.5 cup Chopped Red Onion
1 Serrno Pepper, seeded and chopped
0.25 cup packed fresh Cilantro or Parsley
2-3 cloves Garlic, minced
1 TBSP fresh Lime Juice
0.5 TSP Salt
0.25 TSP Cumin

Directions:
Add all ingredients to a food processor or blender; pulse until desired consistency is reached. Chill at least 1 hour to let flavors blend.

Summer Grilled Dinner

One of my fond childhood memories is from Summer Sunday dinners. My father would grill potatoes and chicken while I prepared salads and vegetables in the kitchen. He never realized some of the vegetables could have been grilled too. :) In honor of summer, I surprised the family with chicken, potatoes, corn on the cob and a savory cherry summer salad.

You will need:
Boneless Skinless Chicken
Yukon or Russet Potatoes
Corn on the Cob
Nectarines or Peaches
Pitted Cherries
Basil
Red Onion
Olive Oil
Red Wine Vinegar
Salt and Pepper
Cucumber

1. Grill or bake the chicken
2. Grill or boil the corn
3. Grill, bake or pan fry the potatoes
4. Prepare the salad: Thinly slice nectarines and cucumbers. Chop the cherries and basil. Drizzle olive oil and vinegar over salad. Add salt and pepper to taste.
5. Garnish the chicken with the salad and serve.

Independence Day Celebration

Recipes

Cherry Lemonade (from Martha Stewart Living, July 2011)
Cook 1 lb pitted cherries, 1 cup sugar, 1 cup water and 1 TBSP fresh lemon juice until sugar has dissolved. (I blended this mixture without the sugar first.) C0ol and strain your mixture. Pour it over a pitcher of ice. Add the juice of 8 freshly sqeezed lemons and 4 cups of club soda (or 32 oz.). You’re all done. :)

Red, White and Blue Chocolate Covered Strawberries
The Disney Family Fun June/July 2011 issue suggests dipping strawberries in melted white chocolate and then rolling the bottom portion in blue sprinkles. Another blogger on TastesLikeFood dipped strawberries in white chocolate and then added a blue frosted swirl (as seen in the picture).

She’s a Grand Old Lasagna

Simply prepare your favorite lasagna and then add red stripes with pasta sauce and chopped olives as stars.

Banana Split with a Twist

This is a fun change from the traditional load it up with ice cream and syrup banana split. Cut your bananas in half and place watermelon balls on top. Add a little bit of whipped cream on top of the watermelon. Place a strawberry sliver or a blueberry on top and you’re all set.

Don’t forget you can decorate your bikes too and take the family for a little parade ride around the neighborhood. Here’s a quick and easy bike decorating example:
