A quick and simple dish to prepare using your bunch of carrots with tops is a roasted or stir-fry carrot dish.
What you’ll need:
1 bunch of peeled and cut carrots
1 diced onion
2 cloves of crushed garlic
1/3 bunch of chopped carrot tops
1 tbsp oil
Sautee onion and garlic in oil until translucent and starting to brown. Add carrots and cook on medium heat, stirring occassionally. Approximately 10 minutes later stir in the carrot tops. Stir occassionally for 2-3 minutes and remove from heat to serve.
Optional alterations made include the addition of peas, snow pea pods, beet chunks, diced potatoes, etc.
