1 Red Onion, Chopped
1 Garlic Clove
2 cups of Peas (or Asparagus)
1 box of Whole Wheat Penne
1 bag of Sundried Tomatoes
1/2 lb of White Button Mushrooms, Whole
1/2 jar of favorite Pasta Sauce (I highly recommend a red wine enhanced or sweet pepper sauce)
Prepare pasta according to instructions on the box. In a skillet brown the red onion, garlic and mushrooms in olive oil. When browned, add sauce, peas (or asparagus), and tomatoes. After the sauce has been thoroughly heated, add the cooked (and drained) pasta to the skillet. Toss and serve.
