Saute red peppers, salt, pepper and garlic in oil. Add black beans, tomatoes and cilantro and cook on medium heat stirring occasionally. When dish is heated all of the way through and slightly thickened, it’s time to serve it. The cilantro should still taste fresh and not be overcooked, bringing together some great flavor combinations. We prefer to serve our black beans over rice, but it would be great over shredded pork, chicken too.
