Today Rachel asked for an Orange Cranberry Muffin recipe and after some searching and reading of recipes, I believe this IS THE ONE to try. The ingredients are simple and use every day items. The cranberries and oranges we’ve been getting in our boxes will work beautifully. If I were to use this recipe, I’d replace the sugar with honey, use whole wheat flour and consider some crumb topping. If you’re avoiding cholesterol, replace the egg with apple sauce. You could probably hide some pumpkin puree in it too!
