Happy Breakfast

Who says breakfast has to be eggs and bacon OR cereal with fruit. 🙂 Some mornings I simply need a little incentive to wake up and since I refuse to pump myself full of coffee or another form of caffeine, other incentives are sought. Today’s pick-me-up was nothing more than multigrain chocolate chip pancakes topped with maple syrup and fresh strawberries. It was like having dessert first.

You’ll Need:
Arrowmill’s Organic Multigrain Pancake and Waffle Mix
Oil for the pan
Chocolate Chips (I use dark chocolate)
Maple Syrup (I use Coomb’s Grade A Organic Maple Syrup)
Fresh Fruit: Strawberries, Blueberries, Banana Slices, etc.

Mix the pancake mix with milk until you get a thick mixture (not lumpy, but thick). Add chocolate chips to the mix and stir thoroughly. Coat the pan with oil and cook pancakes. Serve with fresh fruit and maple syrup.
