Potato, Carrot and Zucchini Stir-Fry

You’ll Need:
4-6 Red Potatoes, peeled and chopped
3-4 Carrots, peeled and chopped
1 Zucchini, chopped
Canola Oil

1. Cook Potatoes in oil for 10-15 minutes, frequently stirring.
2. Add carrots to mix and cook for 5 minutes. Continue to stir. 
3. Add zucchini to mix and cook for 5 minutes. Continue to stir.
4. When all vegetables are tender, you are ready to garnish with salt, pepper, etc. and serve.
