Quick Southwest Salad

Do you ever need a new (and simple) twist to your dinner salad? I aim to keep my salads different, keeping a renewed interest in eating salad. I’ll admit, I’m still amazed in the interest my children show in salads. Not too many families can make that claim. Why not avoid the traditional Caesar and House Salad and try something new?

You’ll Need:
0.5 head of Romaine, chopped
2 Roma Tomatoes, diced
1 can Black Beans, rinsed
1.5 cups Corn, thawed or freshly cooked and cooled
0.25 large Red Onion, chopped (optional)
Dressing of choice OR the dressing from the Southwest Pasta Salad

1. Mix ingredients in a bowl and serve.
