I simply had to try something new and different with my bok choy from last week. Like most recipes suggest, I typically stir-fry it… But this week I wanted something different. We enjoyed our Bok Choy Slaw, and found multiple uses for it. Not only can you eat it as slaw, but you can put in on sandwiches or in wraps.
1 half head of Cabbage
3 carrots, peeled and sliced
1 small head of bok choy
0.5 – 1 cup Mayonnaise of choice
0.5 cup Sugar
0.5 cup Apple Cider Vinegar
2-3 TBSP of Spicy Sesame-Ginger Thai Dressing
1. Prepare Chef4All’s Spicy Sesame-Ginger Thai Dressing the day before or a few hours ahead so it has time to cool before using in this recipe.
2. Mix the sugar, vinegar and mayo in a mixing bowl until smooth in texture. Then add the Spicy Sesame-Ginger Thai Dressing and mix well. Now you have the slaw dressing.
3. Mix the raw veggies into the slaw dressing, cover and refrigerate. It’s ready to serve when you need it.
