Brussel Sprout Stir-Fry

Do you recall our box last month with those delicious brussel sprouts? Well, I created this terrific stir-fry in just minutes and have been meaning to post this ever since. I didn’t have any set plans for this dish other then to use up as many vegetables in the fridge as possible because I had a new box to put away. (Ever have one of those days? LOL)

You’ll Need:
0.5 lb Brussel Sprouts, halved
3 or 4 Carrots, peeled, cut into quarters
2 or 3 Fancy Zucchini, cut into wedges
0.25 lb Crimini Mushrooms, cut into quarters
1-2 cloves Garlic, crushed
Oil

In a hot pan, add oil and garlic. Allow to heat for ~30 seconds. Add vegetables and continue to cook. Stir every 2-3 minutes until vegetables are tender. Serve.
