Beet, Cabbage and Squash Stir-Fry

As a complete experiment, my husband used beets in a stir-fry simply because they were in the fridge. None of us were too sure what to expect on our palate. The result… a vibrant and earthy delight. In fact, we couldn’t really taste the beets unless we ate them separately. The kids even enjoyed them as sautéed versus chips. I think the key is to cut the beets really small while leaving all of the other veggies in larger chunks. Give it a try and see what you think. Experiment with different finishing sauces (sweet, salty, savory) to tailor to your style.

Pictured dish includes zucchini, green and red cabbage, beets, snow peas, celery, carrots, brown rice, red and green bell peppers, lemon juice, onion and broccoli.
