Beet, Cabbage and Squash Stir-Fry

As a complete experiment, my husband used beets in a stir-fry simply because they were in the fridge. None of us were too sure what to expect on our palate. The result… a vibrant and earthy delight. In fact, we couldn’t really taste the beets unless we ate them separately. The kids even enjoyed them as sautéed versus chips. I think the key is to cut the beets really small while leaving all of the other veggies in larger chunks. Give it a try and see what you think. Experiment with different finishing sauces (sweet, salty, savory) to tailor to your style.
