Summer Grilled Dinner

One of my fond childhood memories is from Summer Sunday dinners. My father would grill potatoes and chicken while I prepared salads and vegetables in the kitchen. He never realized some of the vegetables could have been grilled too. 🙂 In honor of summer, I surprised the family with chicken, potatoes, corn on the cob and a savory cherry summer salad.

You will need:
Boneless Skinless Chicken
Yukon or Russet Potatoes
Corn on the Cob
Nectarines or Peaches
Pitted Cherries
Basil
Red Onion
Olive Oil
Red Wine Vinegar
Salt and Pepper
Cucumber

1. Grill or bake the chicken
2. Grill or boil the corn
3. Grill, bake or pan fry the potatoes
4. Prepare the salad: Thinly slice nectarines and cucumbers. Chop the cherries and basil. Drizzle olive oil and vinegar over salad. Add salt and pepper to taste.
5. Garnish the chicken with the salad and serve.
