Make your own vegetable broth

My family continues to ask how it’s possible for me to keep making vegetable soup without buying broth, and have a hard time believing that I just use water and veggies. This forced me to realize that many probably fail to realize how simple it is, so I’m going to share my recipe.

You’ll Need:

A large soup pot (I bought mine at Wal-Mart for less than $15. It’s stainless steel and light. Nothing fancy, but it works.)
1 gallon of water
Flesh of 1 butternut squash
3 tomatoes, chopped
2 carrots, chopped
1 large onion, chopped
3 cloves of garlic, whole
2-3 bay leaves
salt (as desired)
garlic powder (approx 2 tsp or as desired)
onion powder (approx 2 tsp or as desired)

Add all fresh ingredients into the pot (everything but bay leaves, salt, and powders). Boil for 30-45 minutes. Remove from heat and mash vegetables. Put the pot back on the stove and add remaining ingredients. Bring the broth to a boil and add additional ingredients to finish your soup.

Suggested Soup Ingredients:
Peas or Green Beans
Carrots
Potatoes or Rice
Kidney Beans (Red or White)
Celery
Cabbage
