Simple Vegan Chili


You’ll need:

Vegetable broth from our recipe.
1 lb black beans (dry)
1 lb pinto beans (dry)
2.5 lbs ripe tomatoes (diced)
1 lb sweet bell peppers (diced)
1 large onion (diced)
1 tbsp garlic powder
1 tbsp onion powder
1-2 tsp cumin
1-2 tsp chili powder (or more as desired)
salt (add whatever is preferred for your taste)
1 bag of frozen corn (optional)


Add dried beans into a large pot with 8 cups of water and boil until beans are tender (approximately 30-45 min). Strain and rinse cooked beans. Add cooked beans and remainder of ingredients into a soup pot and simmer for 30 to 60 minutes.

Additional ingredients that may be desired to bring out a sweet tomato flavor are:
half to 1 cup ketchup
half cup to 1 cup tomato paste
1 cup brown sugar
1+ jalapeno peppers
